A quick one skillet or pan dinner with a taco flavor that pleases the whole family, with added kale for a boost in nutrition. The spiciness can be controlled by adjusting the amount of green chilies.

  1. Heat large skillet or Dutch oven over medium heat. Add beef, onions, taco seasoning, and cheese blend. Stir to combine.
  2. Add macaroni, chili peppers, and water. Stir to combine. Cover with lid.
  3. Cook for 5 mins, stirring once. Remove lid. Add kale, stir to combine.
  4. Cover with lid. Cook about 3-4 mins until macaroni tender, stirring once or twice while cooking.
  5. Serve with sour cream and green onions on top.
