I love that you can make these pancake pockets the night before and keep them in the fridge or freezer. My son has to get up at 6:00am for school, so now he can grab one of these, heat it up and eat one on the way out to school! With the berry filling, you don't really need syrup. And because they can be eaten without a plate or fork, they are perfect for on the go!

Directions:

  1. Mixup the THRIVE Life 10 Grain Pancake Mix . (You can use any pancake recipe or mix.)
  2. Reconstitute Blueberries and Strawberries. (when doing this, just add a little water and stir around with a spoon)
  3. Pour about 2 tablespoon of the pancake mix onto a heated and well greased skillet. Then spread the pancake mix out a bit to thin it out some....so your pancakes aren’t too puffy at the end.
  4. Scoop a spoonful of the freeze dried berries and add to the center of batter, and spread them out.
  5. Then drizzle a little of the batter over the berries.
  6. Then, flip the pancake to cook the other side!
  7. Eat and Enjoy! What's fun about this, is that you can be creative and use any fillings!
